    Aka Caigua; Many thanks to Brenda and Chris, growers extraordinaire, for introducing us to this incredible, unusual veggie! How do I describe Achocha? It's a member of the cucumber family and tastes a bit like cucumber. One of the "Lost Crops of the Incas", it originated in the Andes and has been traditionally grown in South and Central America for centuries. 'Lady Slipper' produces fruit in pairs: smooth pods that are teardrop-shaped and green. Traditionally, the fruits are hollowed out and filled with other foods, such as meat and rice. Young fruits can be eaten fresh, while older fruits are excellent in stir-fries and pickled. They actually taste like sweet peppers when cooked. They're vigorous vines that will grow to 15' and need trellising, and they are prolific fruiters. Easy to grow, they are "pollinator magnets" as Brenda calls them, and are worth growing in the garden just for that. Plant at the same time as beans, directly in the garden. Fruits should be ready to harvest in late summer. Regular harvesting increases crop yield. The seeds are unique - they look like tiny pieces of bark!
