Abelmoschus esculentus
Originating in Africa, Okra is an ancient vegetable that has been a staple of southern U.S. cooking since at least the early 1800's. In India it is called Ladies' Fingers. Okra is perhaps best known as a key ingredient in soups and stews, especially "gumbo" dishes, in which it is used as a thickener but it is also excellent in stir-fries. A relative of the hibiscus, okra produces large, beautiful, mallow-like flowers that make it a garden-worthy ornamental. A heat-lover, Okra can be grown in shorter-season areas by being started indoors. Once the pods start appearing, they should be picked regularly when young as mature pods get tough.
